But it isn't in rugby, O'Callaghan will join the coaching staff on RTÉ's Ireland's Fittest Family.
He will join Wexford hurling manager Davy Fitzgerald, Olympian Derval O'Rourke and season four winner Anna Geary.
Speaking about his new job, O'Callaghan says,
